Done following subjects in uni:

Calculus, Statistics and Probability (Integral caclulus in R^1)

Discrete Structures (Discrete maths)
Calculus and Probability (Calculus in R^n, Double Integrals, partial diff)
Fundamental Concepts of Mathematics (Foundations of mathematics, Analysis and Group Theory)
Linear Analysis (ANOVA etc)
Operations Research (Linear Programming)

No - you certainly can handle HSC but may need to acquaint yourself with areas you have not yourself, for whatever reason, covered. Although you have done advanced maths relative to the NSW HSC, if you have not done any Physics/mechanics in school and in uni, you'll have to self-educate yourself in this area to handle the mechanics section in MX2..

physics doesnt help with mechanics
I think it does. Not to say that a student who doesn't do physics won't be able to ace mechanics, but I'm pretty sure physics helps you grasp the concepts faster and makes the entire process a bit less painful.

If all else fails, go look at a textbook and see what you can do. I think - reading that - you can probably do some HSC work but there may be a few things like MX2 conics which you may have not done and you might want to brush up on it or learn it as well.

That means that you haven't done Conics, Mechanics, Volumes and Harder 3U...
