I've just finished enrolling in USYD, but throughout the process I never had the chance to pick what time I want my classes to be. Have I missed out on something, or do class timetables only come out later?

If you've enrolled in units of study you'll be able to enter preferences for your Semester 1 timetable from 9am on 19 January 2024. Preferences close at 11.59pm on 23 January 2024.

Yep timetable preferences open and close on the days you listed in your comment above. Even if you somehow forget to do preferencing, they will still allocate you to class.

But at this point you can see what class times will be available for Sem 1 2024
