A friend of my mum's did one year of B of sci then transferred to law. I was thinking of doing the same thing, but I want to know how does this work? Can I still do this? and can do this with other courses like medicine, dentistry?

All you do is apply to UAC like you would have done in high school.

You won't be able to transfer into Medicine. You might be able to for a Bachelor of Oral Health, but you may want to check that.

what about law? and oral health, is that dentistry?

Yes you can transfer into Law, granted to do well academically (D average necessary, but the higher the better especially since USYD is lowering the number of transfers into Law from now on).
