If I were to transfer out of USyd into another uni and do a full time year of study there, then transfer back to USyd into a DIFFERENT degree, would the grades from my previous degree at USyd still be shown on my USyd transcript?

Yes and no

Your official transcript that you get a copy when you graduate (or can request) contains every result of every course.

Within the SydneyStudent admin system, you can get an unofficial transcript for each course separately.
