Is there a site that tells you the grade cut-off that you need to get to be able to transfer into certain courses?

if ure talkn abt the mark u need in first yr, no ... they set them depending on how many ppl apply for the transfer. its more like the uac cut-offs being released AFTER u get ur offer

it should suffice, but again, how popular is ur course? certain courses like software engg (which even tho has a cut off ~92) require DN average

How can that be, isnt it all based on supply/demand?

Those figures are pretty steep, distinction average is only equivalent to ~95-96

The admissions offices at USYD and UNSW can tell you the non-recent school leaver cut-offs for particular degrees, and then you can work out the required GPAs yourself.

For med you'd still need to do the UMAT and interview, for pharmacy I think you'd have to take the STAT

no, it also takes into account on what uve done from when uve completed the hsc to when u apply ... usually, a non recent school leaver application is always followed by an interview ...

An interview? Only if you're applying for a 'special' course, like medicine... oh and UTS sometimes requires them. Generally, there's no interview. :)
