So I have a few questions:

1. What ATAR is required for Psych at UNSW, USYD, MAQU
2. Which Uni is better and why
3. What do you need to do (in uni) to become a psychiatrist
4. What other job prospects are there
5. Can you take a double degree with psych when you enter uni

for number 3, to be a psychiatrist, you have to do medicine, then specialise in it.
to be a psychologist, you need to do 3 years undergrad, plus honours (or a diploma) then 2 years of experience or professional postgrad study

there's no "preferred uni" for psych or anything else for that matter, a degree is a degree regardless of the institution.
