How does one complete a double major? Im assuming it would extend the duration of bachelors degree.

What majors*? Just plan your 2nd/3rd year units carefully so they fulfill the major requirements.

To complete a major, you need to undertake an approved combination of subjects (units of study). Most students undertake one major, but you can take up to two majors if you plan your course carefully. Normally, but not always, you need to undertake 24 credit points worth of senior units of study in a particular subject area, to complete a major.
And it is also good to note that one UoS for one major cannot (at times) be counted for another major.

Was thinking of originally majoring in Molecular bio, but now wondering if its possible to major in both Mathematics and Geophysics/geology?

It is certainly possible to double major within a single degree. In fact it is quite common. Usually a major involves at least (assuming 6cp for each unit):
2 x first year units
2 x second year units
4 x third year units

Keeping in mind you can do 8 units of study per year then you can easily squeeze in enough for two majors.
