Learning about chemical engineering and hydrogen fuel cell in engg1800 i'm confused as to what happens to the oxygen so that it becomes 2H2O

What do you mean what happens to the oxygen? AFAIK (from Year 12), oxygen gains two electrons from hydrogen and forms covalent bonds. Formation of bonds releases energy which is utilised in the fuel cell.
