WTF is a major / minor?!?!

It's what your going to specialise in. In your combined degree, you have to do 1 Engineering major and 1 Business major. Refer to your handbook entry at http://www.handbook.uts.edu.au to see a list of majors for your course. Engineering majors will depends on your UAI (the highest one is Software Engineering). As for Business majors, you can do any one of them except for IT obviously.
