If I were to transfer out of USyd into another uni and do a full time year of study there, then transfer back to USyd into a DIFFERENT degree, would the grades from my previous degree at USyd still be shown on my USyd transcript?

No they are not recorded. They are also the easiest subjects you will ever do at uni. I did WRIT1001 last semester and didn't attend a single lecture and got a HD LOL.
