    we call that quzi (pronounced koo-zee) pacha's sheep intestinal lining (stomach and intestines basically) filled with rice and meat then stitched up and placed in a big stew of chickpeas and meat (which includes sheep tongue, brain) may sound disgusting, but it is beautiful
