Do y’all use case studies for your short-answer responses? Also for questions with a stimulus, does anyone like just make a stimulus-based example? For example, say the stimulus was:
John owns a shampoo store.
Q: Recommend one method of differentiation for John’s shop.
Method: Appeal to social/ethical issues

My made up example: Vegan/animal friendly line of shampoo

Or would you use a case study like: IKEA sources 50% of its wood from sustainable forests?

Assuming you are referring to Business Studies, the use of case study material to respond to short-answer questions is not nonexistent, although it is not expected like in the case of Section IV questions.

Essentially, in order to develop good quality responses to short answer questions, two elements need to be considered:

• Stimulus (if applicable)
• Content/syllabus

Therefore, a good quality response to a Section II type question would primarily constitute effective incorporation of content that is consistent with the syllabus dot point(s) being assessed, in addition to establishing close links/references to stimulus material (if applicable).

However, you will need to incorporate case study material into your answer if it is explicitly stated in the question. Consider Question 25 from the 2016 Business Studies HSC exam for instance:

"With reference to a business you have studied, analyse the relationship between cost and quality in the operations of the business."​

Otherwise, reference to case study material is not required as part of short answer questions, and being mindful the two aforementioned elements is sufficient to develop a high quality response.

No worries.

I believe that is a good way of including an initial reference. However, you may also need to make additional references throughout your response in order to demonstrate the link/relationship that the content that you elaborated on has with the stimulus material. Of course, mark allocation should also be considered when determining the extent to which you are to make references to a particular stimulus.
