I've looked around and seen that some university courses offer a course for alot higher than other courses.

What is the difference between the courses? They both give the same degree, don't they?

Some universities have a better reputation for a particular course and there might also be a higher demand for the course at a certain university.

Once you complete a degree, it states what university you completed it at?

Yes of course as the university is the one giving you the degree.
Does it make a massive difference? All in all, your still completing the same degree, therefore the same units? Are the units set the same regardless the host university?

No, they aren't the same.

There is no central body to regulate teaching in tertiary institutions. This is not high school.

Higher scores are indicative of higher demand.

Those with a higher UAI/ATAR have been demanding that particular course more thus the UAC/University mutually increase the cut-off in accordance with the average ATAR/UAI of the preceding year.
