This. Eat it and live forever.

Serves 4-5

Cheesy Vegetable Casserole

INGREDIENTS
3tbsp Olive Oil
3/4 of a head of spinach (Stalks removed. Rinsed)
1 large zucchini (sliced)
1 tomato (sliced)
1 onion (chopped)
2 cloves of garlic (finely chopped)
1/4 cup basil (chopped)
3 eggs (Lightly whisked)
3/4 cup of Parmesan cheese (I mixed half parmesan and half low fat cheddar)
Salt and Pepper to taste

1) Heat oil in a pan.
2) Add the spinach and cook until just limp. Remove from skillet and set aside.
3) Add the zucchini, onion and garlic to the pan. Cook until just soft.
4) Remove pan from heat.
5) Return spinach to the pan, add the basil and combine.
6) Lightly oil a medium casserole dish.
7) Add the vegetable mixture. Whisk and pour the eggs over the top.
8) Add the tomato slices on top. Sprinkle with parmesan cheese.
9) Bake at 200C for 18 - 25 minutes or until egg cooked and cheese melted.
