Hey, just wondering what goes on during a YOU session and how long you must wait until your assessment sessions before you become recruited into the ADF.

That could just as easily describe the assessment session. The medical at the you session is more just an interview rather than the actual medical (happens at assessment session) and besides that there is only an informal interview.

Big part of the YOU session is the aptitude test which determines your suitability for roles, shouldn't be any thing to worry about though. If applying for some ADFA positions you might also have to do a 2 unit level test on that day.
