what do these mean:

u, v, ux, vx, uy, vy

i know:
u = Initial velocity
v = final velocity
ux = Initial horizontal velocity
vx = Final Horizontal velocity
uy = Initial vertical velocity
vy = Final vertical velocity

But What does this even mean.....
I have an exam on monday, so any help ASAP would be appreciated

Initial velocity means the velocity at the start. And final velocity means the velocity at the end.

When they say velocity only they mean horizontal and vertical combined. So you need to break it into vectors to find out. Hope this helps somewhat...
