As of yet our teacher hasn't been completely clear on the journal - specifically on annotating texts. What exactly do you write for annotations? Is it just along the lines of "This text shows an example of multiple perspectives", etc. Or is it just up to personal preference really as to how you annotate?

You can really do whatever you like with the journal. Unless there is some dispute about whether you actually wrote the major work or copied it, etc, they won't actually read it. For annotating texts I did lots of different things, like writing about what I learned from the text, what about it inspired me, any quotes or techniques (like you mentioned, multiple perspectives) and further reading I could do. For short stories, I sometimes annotated them by sticking in the story, then highlighting and scribbling in the margins. I assume that's what your teacher means by annotating.
