u have a choice for assignments between latex and microsoft word equation editor. latex is cleaner tho

Often assignments are submitted using pen-paper. Or for online collaboration MS word doc.

There is MathTex available in Microsoft Word, no understanding of Latex required. Also as mention by idkkdi Latex is supported in MS word. There is also math auto-proofing available although functionality is more limited.

To summarize you won't need to know Latex due to substitutes.

Unless it's higher level maths (like 3rd year) you can get away with handwriting your assignments.
LaTeX just has a cleaner format which is why it's a preferred format.
