This may seem like a stupid question, but I have no clue.. If you get accepted for a course how long can you defer for and if you apply for mid year admission can you defer till March of the next year?

Not sure about mid year, but deferring usually is only for 1 year, and there is usually a fee. I 'm not sure about the policy for all the different uni's but it varies. You will have to look at whatever uni you are looking at to see what the go is.

u defer for 1 year and come back the next year at the same time to start the course? in that time people usually work as hookers.

At The University of Melbourne you can take leave of absence when you want to take a semester off.
I know that Monash Uni allows you to defer for upto 2 years (Something about If you want to be eligable for YA which requires 18 months of FT income or something along those lines is the reasoning you can use.)
