I was wondering, are the health sciences, for example speech pathology, nutrition, occupational therapy, are they "hard" courses at University? Do you have to be sciencey for them?

Whether it's hard or not is subjective, but no they usually don't require any previous science subjects studied, some may have bio as recommended but you won't have much trouble coping tbh even if you haven't studied it in high school. You honestly don't have to be 'sciencey' to excel at it. Go through the units in your preferred uni/course and judge that for yourself. For e.g. speech pathology at usyd has no science assumed knowledge and just eng adv as recommended.
