Is it possible to take a gap year during your uni overall course time. For example, during a 3 year course would you be able to take a year of after the first or second year of your course was completed?

You just wouldn't enrol in units for that semester.
Fairly sure there's a form you fill in to inform the head of department that you're deferring your course of study mid-progress.
You can take up to a year off while still being considered a student, I'm pretty sure.
