Ok i know its stupid of me not know this but;
for what direction does escape velocity apply? when we got explained it in class we had the "newtons cannon firing off a mountain" except this was parallel to the tangent of the earth at that point.

would the escape velocity apply if you fired the projectile directly up?

Remember escape velocity is only for projectiles - accelerated objects can leave the earth at any speed they want - providing they have fuel.

yeh that's why in ur definition its nice to put 'the speed at which (blah blah blah) without propulsion (blah blah blah)
