I'm not sure whether this is supposed to go here but anyway, I'm trying to find university courses for stage management through UAC, but the only one I found was the Bachelor of Performance at University of Wollongong...until I sent them an email about it and they told me the Technical Theatre major was cancelled. Now I have no idea what to choose, I'm stuck, and the UAC applications are due in by tomorrow!! So if anyone has any other stage management courses in the Sydney kind of area TODAY it would be extremely appreciated?

Stage Management isn't exactly something offered by most typical universities; You'll probably need to look at options such as AIM, NIDA, WAPA etc.

Your other option is to see what majors are offered by arts degrees (where it seems more likely you'll find performance/theatre related majors) rather than a stand alone degree like you are doing now. For example, USYD has performance studies, UNSW has Theatre and Performance Studies and Macquarie has Dance and Performance; all as majors of arts (and some other) degrees.

Stage management itself is probably a bit too specialised for one of the big universities that work with UAC to offer, but if that is really where you are certain you want to be then look into applying for NIDA, AIM etc because that is the sort of course they offer.

The Tech course at Wollongong is disappearing because they're integrating it into their other programs. You can always apply for the Bachelor of Creative Arts (Theatre) course at Wollongong; which focuses on outputting people trained in drama teaching, and will probably take the bulk of the current technical theatre course.

Otherwise; last I checked, CSU has a technical design course in film, theatre and television.
