Low GI protein muffins
ingredients:
2 c. oat bran (can only buy from Coles in the cereal aisle)
3 x 40g scoops of protein powder (i used choc coconut WPI from nobullsupplements.com.au)
1 1/2 tsp baking powder
1/4-1/3 c. nuts (I use walnuts and chia seeds)
1 egg
2 tbsp oil
1/4-1/3 c sweetener (artificial sweetener, honey, sugar, whatever)
1 1/2 - 2 pieces of fruit (i use either a large, very ripe banana OR a tin of sliced apple from coles. idk what kind i can't remember but it didn't need draining it was literally just peeled and sliced apple in a tin and it works wonderfully in this recipe. i used almost the whole tin)
mix is all up, divide between a 12 muffin muffin tin and cook for 17-20 minutes at 220 degrees
