If you have solid gaming experience you might also work at some pubs that have poker nights and need people who can run a table and handle chips. You just go in and ask the manager whether they need staff and explain your skills. Most hospitality and retail outlets in Australia are staffed entirely by students so if you have flexibility and can work most days of the week you should be able to find some work even if it is not the most exciting. You can probably find cash in hand (tax-free) work in hospitality for arout $15p/h and taxed income at $18p/h in retail.

One last option is teaching. Based on your message your English is excellent so you might consider tutoring students or working as a nanny for a family who wants their child to speak French. Whatever you decide I am sure that you will be fine.

I haven't worked there for over a year now so this information is a little dated but most of it should still apply. Firstly, you are going to struggle to convince them to employ you unless you have permanent residency as they try and find people who will work there for 3+ years. It can take three months for your government issued gaming license to be issued so you wouldn't have much time left to work. Also, it is rare for them to hire experienced people unless they need new dealers fast. If they are looking for experienced dealers you will recieve between one and two weeks of training before being on the floor.

The pay is ok but considering that you will have to work almost exclusively night-shift you would probably have a better quality of life working in a cafe during the day. You would be looking at about $21p/h before tax and around 13-16 after tax depending on you visa and tax bracket (how much you earn).

I've seen in the forum that you've been working as a croupier for the Crown. I've been a croupier myself, for a year in London and I'm coming to australia the 16th August. I would like to work for the Crown but i've been travelling for a while so i haven't been dealing for a year and half. I'm coming with a working hollyday visa (i'm french). Do you know if the Crown employ people quite easily, do you think i've got a chance to get a job there? My concern is that i believe i need some practice before going on the floor. Are the managment friendly? And what's the atmosphere betwen the staff? Also I was wondering about the pay, if you don't mind of course. Thank you very much, i would really appreciate if you could answer.
